Ingredients:
- 6-8 fresh Amla (Indian gooseberries)

- 1 tablespoon roasted cumin powder
- 1 tablespoon roasted coriander powder
- Salt to taste
- Water (as needed)
- 1 teaspoon vegetable oil
- 1/2 teaspoon mustard seeds
- A pinch of asafoetida (hing)
- 1 sprig of curry leaves
- 1 tablespoon lemon juice (optional)
Instructions:
- Wash the Amla thoroughly and pat them dry using a clean cloth. Remove the seeds and chop the Amla into small pieces.
- In a blender or food processor, add the chopped Amla, fresh coriander leaves, green chilies, ginger, roasted cumin powder, roasted coriander powder, and salt.
- Blend the mixture into a smooth paste, adding a little water if needed to achieve the desired consistency.
- Transfer the Amla chutney to a serving bowl.
- In a small pan, heat the vegetable oil over medium heat. Add mustard seeds and let them splutter. Add a pinch of asafoetida (hing) and curry leaves, and sauté for a few seconds.
