Ivy guard huli menasina kodilu is a famous recipe in the Mangalore region. This curry has a special space in the South. The ivy guard huli menasina kodilu is a very traditional and authentic recipe. Thondekai huli menasina kodilu is a combination of sour and spicy.
For this curry usually, we crush the ivy guard. Don’t cut ivy guard. If you cut the taste will be different. So this is a unique recipe too. We can use the same procedure for other vegetables but crush and prepare only be done in this vegetable.
While cooking the ivy guard added little spiciness with red chilly powder, sweetness with jaggery, salt. Grated coconut, red chilly, tamarind, turmeric powder with these ingredients, I prepared masala for the curry. Once ivy guard cooked add the ground masala and boil with the masala. Later i have prepared the tampering and added it to the curry. For huli menasina kodilu usually garlic tampering is given for a nice aroma. Otherwise normal tampering and while serving add oil on top of it gives more flavor.
The ivy guard huli menasina kodilu is very good in taste. Huli menasina kodilu is different in taste and this is not a recipe like sambar.
