Mirchi bajji is a very famous tea snack in South India. It is one kind of traditional and authentic snack recipe. In olden days not having any chat items or other snacks. Mirchi is easily available in most of the shops and regions. So everyone makes this Bajji and enjoys their tea or coffee time. From olden days to present days mirchi bajji love has not changed and popularity also remains constant.
In most of the region this mirchi bajji is considered as street food. Not only the streets, tea stalls, office pantries and some restaurants also serve the Mirchi bajji. It is also called Milagai bajji, Mirapakaya bajji. Names and stuffing varies from region to region. Mirchi means Chilli and bajji means Fritters hence we call in our local language Mirchi bajji.
Mirchi bajji recipe is very simple and easy to prepare. Chillies must be green in color and large in size which is not spicy like other chillies. We have to slit the chillies and remove the seeds for making bajji, if you are a spice lover then no need to take seeds from it. Stuffing of chillies is optional, you can make spice stuffing or any other stuff like onion and coriander leaves. Here, I have used roasted cumin powder, salt and lemon juice, instead of lemon you can try with tamarind pulp too.
While preparing the batter for bajji it should be thick. Batter contains besan flour and rice flour and some spices. Crushed ajwain gives more taste than normal bajji. Then the outcome of bajji will be fluffy and give mouthwatering taste to the taste buds. Dip one by one chilli and fry in hot oil. When you are frying the bajji it should be medium flame otherwise the outside cover will fry soon and the chilli will not be cooked properly.
The Mirchi bajji is not only love, it is also an emotion and has a lot of memories. In the rainy season one cup of masala chai and mirchi bajji is a heavenly combination. You can serve Mirchi bajji with coffee and rice with rasam.
